Chocolate Mug Cake with Cherry Chocolate Sauce

Ingredients Mug Cake

  • 1 egg
  • 2 Tbsp. almond milk or cashew milk
  • 1 scoop Chocolate Shakeology
  • ¼ tsp. baking powder
  • 1/4 tsp Stevia (optional)
  • 1 purple container of berries on top (optional)

Instructions for mug cake

  1. In bowl, beat egg and add almond milk. Stir until well-mixed.
  2. Add Shakeology, baking powder and Stir until mixture forms a batter.Think brownie batter
  3. Spray a large, microwave-safe bowl or mug I suggest a bowl as it turns to quite a lot,  with cooking spray. Pour in batter.
  4. Microwave for approximately 1 minute 30 seconds. I check the mug cake after 1 minute because I like mine a little gooey.
  5. When done, turn out onto a plate and enjoy! In a pinch, you can eat your mug cake right out of the mug!

Chocolate Cherry Sauce

Ingredients

  • 1 purple container frozen cherries (i used sour cherries) can use fresh just use more water
  • 1/8 cup COLD water
  • 1 tsp maple syrup
  • 1 tsp cornstarch
  • 1 tbsp Cocoa powder

Directions

  1. Place Cherries in pot on med high heat and heat till softened and juices start to flow keep stirring to prevent burning. may need to add a little water go by tablespoons
  2. In separate container mix cold water and cornstarch stir till combined, add cocoa powder and combine.
  3. add maple syrup to chocolate mixture
  4. pour chocolate mixture over cherries, and stir on low heat
  5. continue to heat on low heat until desired thickness

Pour over Cake!

Enjoy a delicious, warm chocolate”cupcake” totally guilt-free. If you don’t have Shakeology (shame on you!) This is totally Kid approved I just had to make another one for the kids to eat because they liked it so much.

Chocolate Caramel Puffed Quinoa Squares

Have you all heard of the new food craze of Puffed Quinoa? Well let me tell you a little bit about it :

High in Dietary Fibre – Delivers the fibre of a vegetable while not tasting like one.
High in Potassium – Gives a banana a run for its money in the potassium department.
Low in Sodium – Has almost no sodium and tastes good without adding salt.
High in Magnesium and Iron – Provides two minerals that are sometimes hard to come by.
Good Source of Protein – Packs the protein punch of meat and has all 8 amino acids.

You can also make your own puffed Quinoa  at home as well, as it can be expensive to buy. Its not hard at all its so light and fluffy. I have read up on how to do it exactly as well.  One day I might try it ha-ha. But until now ill just stick to buying it.  All you pretty much have to do is rinse the quinoa and then place it on a cookie sheet in oven on low setting till its dried out, then you are going to stick it in a pot on the stove and heat it up like popcorn. Here’s the thing you don’t need to use oil, but you can if you want to but it will work without it. and keep stirring and stirring so it doesn’t burn. Now I have not tried this method yet, but have read various sites that have said this works.

Chocolate Caramel Puffed Quinoa Squares

Makes 16 squares

Puffed Quinoa Bottom Layer Ingredients

· 4 tbsp. Coconut Oil

· 4 Tbsp. Maple syrup

· 2 Tbsp. cacao powder

· 2 cups puffed Quinoa

Caramel Layer

· 10 Dates, pitted (soft dates if not soft soak in water for ½ hour first)

· 1 tbsp. Almond Butter

· 1 Tbsp. Maple syrup

· 1/3 cup water

· 1 tsp vanilla

Top Chocolate Layer

· ½ cup Coconut oil

· 1 tbsp. maple syrup

· ½ cup cacao powder

Directions

Puffed Quinoa Layer

1. Melt coconut oil and peanut butter in pot

2. Add cacao powder and puffed quinoa in and stir

3. Place in a 8×8 pan, lined with plastic wrap so it’s easy to pull out and cut later on

4. Place in Freezer for 10 min till set or till done making next layer the caramel

Caramel Layer

1. Place all ingredients in high speed blender or food processor and blend till you get a caramel consistency, it’s just that easy if too thick at more water only 1 tsp at a time. (Sometimes dates are drier than others.

2. Place caramel on top of Puffed layer and return to freezer let set for approx. 15 min until hard

Chocolate layer

1. Place ingredients on double broiler pot or by placing a large glass bowl over pot with water boiling under. Melt everything and whisk until smooth and then poor over top caramel layer

2. Place back in freezer for approx. 20 mins until hard and then cut into squares.

3. I would suggest keeping in freezer and take out as needed

S’moreCookies and a New look and Name for the Website!!

These are soooooo deli shish , I am not a fan of S’mores actually but these are so good. These cookies sure didn’t last long in my house. Seriously! If you love S’more then these are for you, or even if you don’t love S’more you’ll love these. They really are easy to make too. 

Also if you haven’t noticed that I have done a bit of a blog overhaul then guess what things on here are changing and I have decided to take my blog in a different direction so I’m able to share more stuff with you guys. I want to show you so many things we are doing around here from the house to the new shop to making a bigger garden and a bunch of more projects along the way!! I hope you stick around for the ride!!

S’more Cookies

INGREDIENTS

  • ¾ cup butter, softened
  • ½ cup white sugar
  • ½ cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 cup graham cracker crumbs
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ cups semi-sweet chocolate chips
  • 1 dairymilk  bar, broken
  • 1 cup mini marshmallows

INSTRUCTIONS

  1. Cream together butter and sugars; mix in egg and vanilla.
  2. Add flour, graham cracker crumbs, baking soda and salt. Mix until smooth.
  3. Stir in chocolate chips and chocolate chunks until well combined.
  4. Drop by heaping tablespoons onto cookie sheet about 3 inches apart.
  5. Bake at 375 degrees for 8 minutes. Remove and quickly press marshmallows into cookies. Return to oven and cook until done, about 3-4 minutes.

Um Can you Say Chocolate Heaven!!

OMG!! So you all know my cravings with strawberries right now and heck now lets add in some Chocolate cake to go with it. I made this last night and its sooooo delish! Man approved!!

I changed it up a bit from what Amy did at DAMY Health. I made it in layers but you can do it her way as well which is less work ha-ha!! I put a layer of crust then a layer of the chocolate fudge, then a layer of sliced strawberries, then a layer of crust then the fudge and whola your done. I defiantly will be putting more strawberries on top though next slice I have why because its good and I can!! Once again I’m sorry for my picture taking skills I only have my I phone and well it doesn’t take the greatest food pics.  But I’m not a photographer either or a chef of any sort, but what I do know is this is delish even though its not the most appealing looking.
