Korma Chicken 

Korma Chicken

Serves 6

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 tbsp minced garlic
  • 1 1/2 tsp minced or grated fresh ginger
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 1/2 tsp garam masala
  • 1/4 tsp ground turmeric
  • 2 tbsp ground almonds
  • 2 tbsp tomato paste
  • 4 boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 cup greek yogurt or plain yogur , whisked until smooth
  • Salt, to taste

Directions

  1. On medium-high heat, in a large, deep non-stick skillet, sauté onion in butter for 2 minutes or until soft. Add garlic, ginger, ground coriander, chili powder, garam masala and turmeric; sauté for 30 seconds, being careful not to burn.
  2. Stir in almonds and tomato paste, and sauté for 2 minutes to blend well with the spices. Stir in chicken and sauté until lightly browned on all sides, about 3 to 4 minutes.
  3. Stir in yogurt; cover, reduce heat to medium and simmer for 6 to 8 minutes until chicken is completely cooked through. Season with salt. Cook covered for 2 to 3 minutes or until the curry comes to a boil.
  4. Serve over rice!

Chicken Quesadilla

Chicken Quesadilla

Ingredients

1 Large whole wheat quesadilla (this equals 2 yellow containers) , may use 2 small corn (If only have one yellow container)

1/2 Red Container of precooked chicken (If not using greek yogurt as side dip fill red all the way full if desired)

1 green container worth of peppers and onions and tomatoes chopped

1 blue container of shredded cheese of choice I used a mixed tex mex variety

1/2 red container of Greek yogurt

1/2 green container of homemade salsa ( I used a brand I got a costco) 1/2 cup of this salsa counts as one green (if using salsa from a jar it counts as 1 purple)

Directions

  1. Add ingredients on the whole wheat tortilla, warm the chicken if desired.
  2. Spray a skillet with cooking spray or olive oil and place on medium-high heat
  3. Place tortilla on skillet and fold in half. Flip to brown both sides – about 2 minutes each side or until desired crispiness is achieved.
  4. fill a small ramekin up with your greek yogurt and your salsa and place on side.

Eat and enjoy!!

Zucchini Soup and Sticks

Does anybody else still have an abundance of zucchini well I sure do.  Still trying to use them up that for sure.  As I was looking through #DAMY Health’s Website I thought well look at that there is a   Cheesy Zucchini Stick Recipe I thought well that will help use up some and they sure were tasty!  Paired with a little marina sauce and I was good to go a nice little snack.

I also made this Zucchini soup the other day as well its so good. Its one of my favourite go to soups and its so easy just throw it all in a pot for like 20 min and then puree it and your all done.

Zucchini Soup 

1 Large Zucchini or  3 smaller ones

1 medium onion

2 garlic cloves

4 cups chicken broth or vegetable broth

salt and pepper to taste

1 tbsp. Sour cream or plain Greek yogurt (optional great with or without)

Chop everything up in big chunks no worry about tiny pieces and toss in big pot. Boil till soft about 20-30 minutes .

Cool down a bit enough to puree it then serve.

Makes 4 servings

I paired it with some awesome Cheesy cauliflower bread sticks from DAMY Health this was a great meal on a cold rainy day!!

Shepherd’s Pie Low-Carb

This is such a delish dish, It tastes like comfort food mmmm!! No wait it is lol. Especially here since its just snowed AGAIN ugh. Im ready for spring.

There are so many different things you can do with this recipe to really make it your own though!! Use beef, or buffalo or turkey or chicken I used turkey sausage for the spices so you might want to add some of your favourite spices as well if you choose a different meat option Damy Health has a vegetarian option.

Shepherd’s Pie

bake 350  45 min 

5 serving(s) turkey sausage  casing removed 

2 cup(s) fat-free, reduced sodium, chicken broth   

4 garlic herb laughing cow wedges

1/2 cup(s) shredded, parmesan cheese   

1 Tbsp whole wheat flour   

1/2 cup(s) cooked green peas   

1/2 cup(s) cooked corn kernels   

1/2 cup(s) cooked carrot(s)   

1 cup(s) cooked onion(s)   

1/2 cup(s) cooked celery   

1 cup(s) fat-free, plain Greek yogurt   

1 tbsp tomato paste

1 Large head of Cauliflower

1 tsp salt

1 tsp pepper

 

Directions

Cook turkey in pan, with casing removed, add onions and carrots and celery to the mixture and add 1 cup of chicken broth and cook down to reduce and continue to cook till carrots are pretty soft. Add flour and tomato paste stir and now add remaining chicken broth, may need a bit more. Stir. add in peas and corn. Pour all in casserole dish. Now onto the top. you can use my cauliflower mash and just double it up. or you can follow this.

Microwave cauliflower for 10 to 15 min till tender, place in food processor with yogurt, laughing cow salt and pepper. mix till no lumps spread on top of meat mixture and use fork on top to make lines and spray lightly with cooking oil. now sprinkle with cheese and bake!

Stuffed Zucchinis

So are you all sick of Zucchini yet? I’m not quite yet!! It really is the most versatile vegetable out there!! I made these the other night for supper and boy was I stuffed. You really could throw whatever you want on them. I had a craving for potato skins and this was the next best thing!

In my mix there is:

1 Zucchini cut in half and seed hollowed out

1 Spinach and Feta Chicken Sausage ( I found this at Walmart and its the great value brand and is pretty good)

1 tomato chopped and seeded

1 small onion

1/4 up grated cheese

garlic to taste

salt and pepper,

1 dollop of Greek yogurt on top!!

 

Place Sausage, onions, garlic in pan and fry up with a spray of oil, Place everything in Zucchini boats when finished and place in oven at 350 and cook for about 30 min or till desired tenderness!

Pineapple Coconut Upside Down Cake

DAMY Health has an awesome recipe for Pineapple Coconut muffins so I thought what a perfect recipe to make a cake!! It turned out soooo good, I can’t even explain, I also made it with cherries too, so good too!! I followed her recipe to a T except making it a cake instead of muffins!! The best thing about this recipe is there is no flour its CHICKPEAS!! She has made some awesome snacks with them. I actually made this along time ago and forgot to share it with you and realized once she put out her salted upside down apple Caramel  here are a couple more from .

Cauliflower Mashed Potatoes

Honestly I think I have just made the BEST cauliflower mashed potatoes EVER!!!

DAMY Health has a great Cauliflower Mashed Potatoes, but I put a little twist on mine and added some favourites!! I like mine creamier!!!

Also on my plate is roasted asparagus with parmesan cheese and chicken with Epicure ranch seasoning and Greek Yogurt.

Here’s whats in mine!!

1 head of cauliflower

2 laughing cow wedges garlic and herb

2 tbsp Greek yogurt

1 tbsp epicures cheese chive and bacon dip spice

salt

pepper

Place cauliflower in microwave NO water do not steam you want the cauliflower to stay dry this is key. till tender aprox 10 min or so then place in blender all ingredients and your done!!

A little Mexican in the Crockpot!

Want a super easy meal to throw together in a Crockpot for all those busy Moms out there. I honestly don’t know how some of you can manage all those sports with your kids and keep your life running smoothly. I only have one and one on the way and I have a hard time ha-ha!! So hats off to you guys!! This recipe honestly is super quick and easy!!

Santa Fe Chicken in the Crock Pot

  • 2 or 3 boneless skinless chicken breasts
  • 1 can of diced tomatoes with chilies
  • 1 can of corn or frozen corn about 1 1/2 cups
  • 1 can black beans drained and rinsed
  • 2 cups chicken broth or half a box
  • 1 package of low sodium taco seasoning

Place everything in crock pot and place the chicken breasts on top of the mixture. Cook on low for about 10 hours or high for 5. Approx 1/2 to 15 min before serving take out the chicken and shred it with two forks. Place all the shredded chicken back into the Crockpot and stir and continue to cook for about 15 mins!

  • This is great served over lettuce or rice or both. You could also get creative and put lettuce, rice, and crunched up corn tortilla chips and then place chicken mixture on top. Top with some shredded cheddar or tex mex. Maybe a little dollop of plain Greek yogurt!! There you have a complete meal!!
  • If you have left over’s the next day, place in a wrap with lettuce or make a quesadilla with it!! The possibilities are endless here!!

Berry Frozen “Greek Yogurt”

I love frozen yogurt, and recently I went to my local Value Village and I found a Ice Cream maker for $8, yes that cheap and it’s a Cuisinart believe it or not! It works like a dream. I have been wanting an ice cream maker for ever, well ever since I got my kitchen aide mixer for Christmas a couple years ago. The attachment for the kitchen aide is more then $100 dollars and I hoed and hummed buying it forever, so when I saw this machine I think I did the I think I won the lottery dance in the isle at Value Village. ha-ha no really!!

I have made a few things in there now too and I freaking love it!!

On to the recipe and you DON’T need an ice cream make to make this either. All you need to do is place the finished product into and ice cream tray and then pop them into the freezer and then when you are craving some frozen yogurt you just take out about 3 cubes or more and place into your blender. And whola your ready to rock!!

Berry Frozen “Greek Yogurt”

  • 2 Cups Greek Yogurt plain
  • 1/4 cup stevia
  • pinch of salt
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon Maple syrup or Agave
  • 1/2 bag of frozen mixed berries or berries of your choice
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  1. In a large bowl mix together the yogurt, stevia, salt, vanilla and maple syrup
  2. In a pot place the berries, honey and lemon juice on low till fruit is soft about 10 mins. Stain the berries and discard the liquid. Once cooled place berries into the yogurt mixture and cover and refrigerate 1 to 2 hours or overnight. or if not using ice cream make pour into ice cube trays and place in freezer.
  3. Turn on ice cream maker and pour the liquid into the FROZEN bowl and then let thicken about 15 to 20 mins. If you want a thicker consistency place in a separate bowl and place back into freezer for about 2 hours.

Broccoli and Cheddar Soup

You know its not easy taking a picture of a bowl of soup! I’m not the best photographer but just so you know this soup is delish!!

Cream of Broccoli and Cheddar Soup

makes 4 servings

Ingredients

  • 1/2 small onion
  • 8 cups or 3 Heads of Broccoli
  • 2 cloves of garlic minced/chopped
  • 1 box of Fat Free reduced sodium Chicken Stock
  • 2 Tablespoons Greek Yogurt
  • 1 blue container of cheese of choice
  • salt
  • pepper
  • dash hot sauce (to taste) * optional

Directions

Combine the first four ingredients in pot and cook on med till broccoli and onions and garlic are tender about 20 mins.

Puree then add Greek Yogurt and Cheese using an immersion blender or food processor.

add the rest of the ingredients to season to taste.

1 1/2 green, 1/4 blue
