21 Day Fix Friendly Lasagna

Serves 6

Ingredients

  • 1 pound ground beef cooked
  • 1 jar tomato sauce (*homemade or store bought)
  • 500 gr dry curd cottage cheese*
  • 2 cups shredded mozzarella cheese or Italian blend
  • 9-12 oven ready lasagna noodles or pre-make noodles beforehand

Directions

  1. cook ground beef, and place tomato sauce with ground beef in frying pan
  2. spray or grease a 8×8 pan and preheat oven to 425 °c
  3. place 3 noodles on bottom of pan and then layer with ground beef then a layer of cottage cheese then 1/2 cup of shredded cheese approx 3/4 cup of ground beef and cottage cheese, then repeat with noodles and ground beef sauce mixture and then cottage cheese etc, until you have used up everything saving most of the shredded cheese for the top of the lasagna. You should end up with 3 layers.
  4. Place tin foil over pan and place in oven for 45 minutes, last 10 min take tin foil off and let top get browned a bit!!
  5. Let rest for 20 mins covered to let sauce settle and not be runny!!
  6. Slice into 6 pieces

Container counts

1 square = 1 red, 1 yellow, 1 blue, 1 green if using homemade sauce*

1 square = 1 red, 1 yellow, 1 blue, 1 purple if using store bought sauce*

*may sub dry curd cottage cheese for regular cottage cheese just rinse and dry before placing in lasagna. May also use ricotta cheese!

Transformation 2 months progress

I can’t believe how far I’ve come in this short amount of time. The difference in my mind and body have completely changed. I am in shock that I was able to do this in 2 months with Beachbody’s Country Heat workout and walking near the end because of my back injury. I followed the program and eat with the portion controlled containers and stuck to it! There was lots of obstacles to over come in the month that’s for sure, but I didn’t let it stop me, I just kept pushing on.

Honestly, there were times when I felt like giving up, mostly when I put my back out from doing the Core De Force preview workout, yeah that happened, but I didn’t let it consume me I made sure I was eating on plan and just kept chugging along. I have to thank all my accountability group challengers for helping stay on track too!!

I did all this while making and eating the foods I love, sure I had to adjust some this here and there to make them plan approved but honestly who couldn’t benefit from eating better.

Baked Blueberry Oatmeal

Baked Blueberry Oatmeal

Ingredients

  • 1 purple container blueberries
  • 4 yellow containers of oatmeal  (4 1/3 cups)
  • 2 red containers of dried cottage cheese curds
  • 4 eggs
  • 3 1/2 yellow containers of water
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup maple syrup
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Directions

Mix everything into bowl, and pour into an greased 8 x 8 baking pan. Bake at 375 degrees for 30-40 min. Should spring back when pressed in center when its finished baking.

1/4 purple, 1 yellow, 1 red

Pork Chops in Mushroom Gravy

Pork Chops in Mushroom Gravy

serves 2 – 4

Ingredients

  • 2- 4 pork chops
  • 1 medium onion sliced
  • 2 cups mushrooms sliced
  • 1 tsp cornstarch
  • 1/2 cup cold water
  • 1/4 cup cashew milk
  • 2 cup chicken broth
  • salt and pepper to taste

Directions

  1. pre-heat oven to 400 deg
  2. brown pork chops on both sides in skillet on med high, transfer pork chops to plate to rest while you cook the mushrooms or place in a baking dish if you do not have a cast iron skillet
  3. place mushroom and onions in skillet and 1/4 cup of the water and saute for 5 mins
  4. in separate bowl combine cornstarch and 1/4 cup cold water mix till combined, pour over mushroom and onion mixture, and then add 2 cups of chicken broth
  5. place pork chops back in pan and transfer to the oven
  6. bake at 400 for 30 min -40 mins depending on thickness of pork chops. When no longer pink inside they are done
  7. take pork chops out pan and put on plates, mix in the cashew milk into the mushroom onion mixture, salt and pepper and plate over top pork chop.

Ingredients

  • 1/3 cup dry oatmeal
  • 3 tbsp dry curd cottage cheese
  • 1/8 tsp baking powder
  • 3/4 cup water
  • 12 cherries pitted
  • 1 egg
  • 1 tbsp maple syrup

Directions

  1. Preheat the oven to 350, and line or grease a oven safe dish.
  2. Place all ingredients in separate bowl and stir together
  3. Pour everything into oven safe single dish like a ramekin dish
  4. Bake 30-40 mins making sure it is cooked all the way through, It should bounce back after its cooked.

ARE YOU AT A PLATEAU?

ARE YOU AT A PLATEAU?
It happens to all of us at some point. But there are few things we need to consider.

You are stepping up your game, you stepped out of your comfort zone! You are eating healthier, you got this!! Then all of a sudden BAM!! The scale has stopped moving. You think to yourself whats going on here I’m doing all of the right things, why am I not loosing weight.You haven’t changed anything. You’re doing everything exactly the same as before, so why isn’t your body responding now?

You, my friend, have hit a plateau.

Before you read the steps below on how to break a Plateau make sure you have taken your measurements have they gone down? Are your clothes fitting looser? You may think you need to gauge your weight-loss on the scale but guess what as I always say the scale is and ASSHOLE!! yeah I said it and I will say it again its an ASSHOLE!!! and you shouldn’t judge your weight loss solely on the scale. Its only a number and it doesn’t define us.

I want you to think about how far you have come already and the changes you have made thus far into your journey. I always make sure to take those pictures along the way at least every two weeks so that you know how much progress you have made. Second I always take measurements because those never lie to you!! Third I have an outfit that I always put on to gauge as well.

There are a few things we can do in the event of a plateau,

  1. If you are using the portion control containers from Beachbody maybe you need to move down a container level. Go back to your nutrition guide and recalculate your intake amount.
  2. Track everything you eat, are you being truthful of everything you are putting in your mouth? If you aren’t using the container system what about an app to track your calories and food intake? I like to use Loseit app for this!! I also you it to track my weight and it also stores a lot of my recipes as well. I also like using a wipe off board to track my container system this works great for me when I’m doing the container method.
  3. Are you getting enough sleep? You should try and get an average of 6 to 8 hours of sleep a night. I know when I don’t sleep well, I’m over tired and then I end up eating like crap the next day because I’m to tired to plan my day out and just reach for what ever available.Sleep is so important!
  4. WATER WATER WATER!! Are you getting enough water. I cant stress this enough this is probably one of the most important things up your water game!! If you aren’t a water drinker now is the time to start that. If your not a fan of water add fruit to it or lemons and cucumber or any flavor option, that doesn’t come in the form of a squeeze bottle. Flavor it with healthy options.
  5. Try switching up your workout routine, if your not lifting weights maybe try incorporating those, or boost up your intensity. Maybe now your just going through the motions and need a change. Or maybe just adding an extra 10 mins to your workout will kick it up a notch. I’m not a huge fun of long workout routines. I don’t like feeling like my whole day is dedicated to it. So maybe adding in some intervals in to would be a good mix.
  6. Still not losing getting anywhere if you want to try Beachbody’s 3 Day refresh as well its a great option. you can read more about it here!
  7. Maybe you need a challenge, a push. I find when I run a accountability group I do awesome with a little competition and the accountability of checking in daily with someone makes a huge difference.
